Ingredients for making Gherkin Vinaigrette:

 4 units of gherkin

 2 ripe tomatoes (medium)

 1 red onion (small)

 ½ small yellow or red pepper

 ½ lemon

 ⅓ cup of olive oil

 4 tablespoons of apple cider vinegar

 Salt and black pepper to taste)

 pepperoni pepper (to taste) - optional

 fine herbs (to taste)
